The Fondazione Edmund Mach (FEM) has developed the world’s first metabolomic atlas of grape varieties through the ‘Grape metabolome’ project. Researchers analyzed 126 varieties globally to create a chemical map based on metabolic composition—including sugars, acids, polyphenols, and aromatic precursors—rather than DNA.

Published in the ‘Journal of Agricultural and Food Chemistry’, the study offers a holistic approach to detecting compounds within a product. General Director Riccardo Velasco noted that the atlas allows for the identification of similarities and differences between varieties, helping to observe the relationship between genotype and phenotype. The research has even led to the identification of previously unknown compounds, providing winemakers with deeper insights into the enological potential of different grape types.
