Scientific research has identified a link between the regular consumption of fermented foods—such as kefir, kombucha, sauerkraut, yogurt, and kimchi—and improved digestive and systemic health.

Initial studies published in the journal Cell involving 18 participants demonstrated that a ten-week diet of fermented products increased gut microbial diversity and reduced the activation of four types of immune cells. This diet also led to a decrease in interleukin-6, an inflammatory marker associated with conditions like rheumatoid arthritis and chronic inflammatory bowel diseases. Notably, these anti-inflammatory effects were not observed in control groups consuming high-fiber foods.

Subsequent research from Stanford University involving healthy adults expanded on these findings, suggesting that consuming six portions of fermented foods daily can significantly lower 19 different inflammatory proteins, including the cytokine Interleukin-6. Furthermore, meta-analyses of over 800 individuals with diabetes or pre-diabetes indicate that fermented foods may improve fasting blood glucose, total cholesterol, LDL cholesterol, and diastolic blood pressure. Some research also suggests that high yogurt consumption is associated with a lower risk of all-cause mortality.
