Simultaneously, a disconnect has emerged between high visitor numbers and economic value. While bookings remain at record levels, Confesercenti indicates that spending in restaurant and tourism-related services has dropped by 20% to 25%, with some areas seeing declines as high as 40%. 

In Cagliari, restaurateurs have noted a shift toward a ‘mordi e fuggi’ (eat and run) trend, where guests order minimal food and avoid wine. Pamela Solinas of L‘Oca Bianca highlighted the economic strain, noting that some guests order very little, stating, ‘We are a restaurant, not a bar, and we have the costs of a restaurant.’ This suggests tourists are becoming increasingly price-sensitive, opting for cheaper alternatives like supermarkets over local dining services.
