A CUT launches new open-flame brand at Taipei Dome

Michelin-starred steakhouse A CUT is launching a new brand, ‘The Grill by A CUT’, located on the 8th floor of the Taipei Dome (Far Eastern Garden City) in Taipei. Scheduled to open on September 10, the new venue marks a strategic move by the Grand Hi-Lai Hotel brand to expand from its traditional hotel-based setting into a commercial shopping environment.

Unlike the flagship A CUT, which focuses on precision temperature control and dry-aging techniques, ‘The Grill by A CUT’ emphasizes direct open-flame grilling using longan wood. The menu features a 1:1 ratio of meat to seafood, including options such as Australian grass-fed beef, Japanese Kyushu Wagyu, New Zealand lamb, and various grilled seafood like Boston lobster and seasonal fish.

The restaurant adopts a ‘New American’ culinary concept and an Art Deco-inspired ‘modern arena’ design, blending 1920s aesthetics with contemporary luxury. The dining experience will offer an a-la-carte format aimed at younger crowds, tourists, and business professionals, supported by a curated wine list managed by the original A CUT sommelier team.
