Adilcevaz traditional flour mill continues to operate

A traditional flour mill in the Adilcevaz district of Bitlis, Turkey, continues to operate despite the widespread use of modern industrial technology. The mill serves as both a functional facility for local residents and a significant piece of the region's cultural heritage.

The mill processes wheat and various other grains into flour using traditional grinding stones and methods. While the prevalence of modern factories has reduced the general importance of traditional milling, local consumers continue to seek out the mill for its traditional production style.

Owner Fazıl Akkol, who inherited the business from his father, noted that while Adilcevaz once hosted ten mills, only this single one remains active. Akkol expressed his intention to maintain the operation to pass the tradition on to future generations.
