Aeon Tohoku and Green Ace to launch upcycled bakery products

Aeon Tohoku and Green Ace have partnered to launch a series of six upcycled bakery products using unused vegetables from six prefectures in the Tohoku region. Starting October 16, 2026, these limited-edition items will be available at 30 Aeon-affiliated stores across Aomori, Iwate, Akita, Yamagata, and Miyagi prefectures.

The initiative utilizes Green Ace’s proprietary powdering technology to transform vegetables that are typically discarded due to being non-standard in size or being scraps from processing. By turning these into powders, the companies preserve the color, aroma, and nutritional value of the produce to create value-added food items.

The product lineup includes: - Potato cake salé (Aomori) - Corn financier (Iwate) - Pumpkin and black sesame financier (Akita) - Spinach and red bean financier (Miyagi) - Asparagus and cheese cake salé (Yamagata) - Ripe tomato and herb cake salé (Fukushima)

This project follows a successful pilot program in early 2026 that focused on unused asparagus from Yamagata. The expanded collaboration aims to address regional issues such as food loss and promote the revitalization of local resources.
