Air France partners with Michelin-starred chefs for new long-haul menus
Air France is upgrading its long-haul dining experience for passengers in La Première, Business, and Premium cabins on flights departing from Paris. In collaboration with Servair and its Culinary Studio, the airline has enlisted six renowned French chefs to design new menus featuring seasonal and sustainably sourced ingredients.
Mathieu Viannay, chef of the two-Michelin-starred La Mère Brazier, has developed over 20 hot dishes for the Business class, including creamy fregola with Mimolette cheese and glazed salmon with green Puy lentils. For the luxury La Première cabin, three-star Michelin chef Arnaud Lallement has created more than 30 recipes, such as lobster cooked in court-bouillon with paprika sauce.
Other culinary contributors include François Adamski, a Bocuse d’Or winner responsible for breakfasts and brunches, and pastry chef Nina Métayer. The initiative aims to showcase the richness of French gastronomy through high-end dishes ranging from truffle béchamel stuffed eggs to sophisticated desserts.
