Air France partners with six chefs for new long-haul menus
Air France is partnering with six prominent French chefs to develop new menus for its long-haul flights departing from Paris. The collaboration covers La Première, Business, and Premium cabins.
For the La Première cabin, three-Michelin-starred chef Arnaud Lallement of L’Assiette Champenoise has designed over thirty dishes in collaboration with Servair’s Culinary Studio. The menu features items such as lobster poached in court-bouillon and Swiss chard stew. Additionally, pastry chef Claire Heitzler will provide four new seasonal desserts, including chocolate mousse and vanilla-based creations.
In the Business cabin, two-Michelin-starred chef Mathieu Viannay of La Mère Brazier has created more than twenty dishes. This update introduces hot dishes available during both the first and second services, including options like glazed salmon with soy-butter sauce and creamy fregola with Mimolette cheese.
