Air Fryer Acrylamide Risks Highlighted by Experts
Health specialists explain that air fryers do not generate acrylamide on their own, but they can create the high‑temperature, dry‑heat conditions that cause the compound to form in starchy foods. The substance arises from the Maillard reaction when the amino acid asparagine reacts with natural sugars at temperatures above about 120 °C, a process that also occurs in conventional ovens, grills and toasters.
Foods most prone to acrylamide formation include potatoes, sweet potatoes, cassava, corn, toasted bread, biscuits and other grain‑based items. To limit exposure, experts advise cooking at 160 °C‑180 °C, cutting tubers into larger pieces, removing food once it is lightly golden, and avoiding excessive browning. The International Agency for Research on Cancer classifies acrylamide as “probably carcinogenic to humans,” though human studies have not yet confirmed a clear cancer risk from typical dietary intake.
