Amasya's traditional baklalı dolma preserves regional culinary heritage

The traditional baklalı dolma, a dish with a registered geographical indication, holds a significant place in the culinary heritage of Amasya, Turkey. The dish is characterized by its unique preparation method, where a filling of dried broad beans, cracked wheat, onions, peppers, tomatoes, and paste is wrapped in vine leaves into a five-cornered bundle shape.

A key element of the cooking process involves placing bone-in rib meat at the bottom of the pot before arranging the stuffed leaves on top, which are then slow-cooked for approximately two hours.

Beyond its culinary value, the preparation of baklalı dolma serves as a social ritual. It is a staple for special occasions such as holidays, weddings, and engagements, often involving groups of women, neighbors, and relatives gathering to prepare the dish. This culinary tradition is passed down through generations, with mothers teaching the specific wrapping techniques to young girls to ensure the preservation of Amasya's local flavors.
