Amira Addyani, a 31‑year‑old mother of three with Italo‑Moroccan roots, left a secure position to pursue her passion for pastry. She opened a new pâtisserie in Modena that fuses French haute pâtisserie techniques with Italian ingredients such as Sicilian citrus and locally milled flour. While still studying haute pâtisserie at night, Addyani balances work with caring for her children, often learning while they sleep.
