Andoni Luis Aduriz joins Apapaxoa 2026 festival

Spanish chef Andoni Luis Aduriz, founder of the multi-award-winning restaurant Mugaritz, is participating in the third edition of the Apapaxoa 2026 gastrocultural festival organized by Grupo Xcaret.

Aduriz is involved with the innovative project Xal, which seeks to connect Mexican coasts with historical transoceanic routes, such as the Manila Galleon. He emphasizes the importance of cultural identity, community, and the connection between culinary experience and memory. During his participation, Aduriz highlighted the creative potential of the Mexican environment and the historical fusion of ingredients resulting from early globalization.
