Ankara’s Çubuk Turşu Harvest Fuels Global Export
In the Çubuk district of Ankara, the spring harvest of cucumbers used for the geographically‑indicated Çubuk turşu has begun. Producers harvest roughly 80 bags of cucumbers each day from about 45 dunams of fields, working from pre‑dawn to avoid losing the pickling quality. The cucumbers are quickly sent to local processing plants where they are mixed with garlic, hot pepper, bay leaf and dill, then fermented for a month with grape vinegar and lemon salt before being packed into jars for domestic sale and export.
Veteran farmer İrfan Topal, who has cultivated the crop for a decade, notes seasonal challenges such as price pressure, pest infestations (spider mites) and weather‑related diseases, requiring round‑the‑clock effort. He estimates a price of 5 kg at 900 lira for this season. The finished product reaches markets across Turkey and abroad, and the annual festival held from 6‑9 September showcases the turşu to international visitors.
