Per‑capita pork consumption in Argentina rose from 6.22 kg in 2006 to 18.89 kg in 2025‑2026, a 171 % increase over two decades. The surge coincided with a sharp fall in beef consumption, which dropped to 47.3 kg per person, the lowest level in twenty years.

The price differential between beef and pork expanded to around 120 % in 2026. Beef averaged about $18,564 per kilogram while pork (pechito) cost roughly $8,944 per kilogram, making pork a considerably cheaper protein source. In February 2026, three kilograms of pork were priced roughly equal to one kilogram of beef.

An INTI study highlighted the nutritional merits of pork, stating that pork fat is comparable to olive oil and that pork provides high‑quality protein, essential minerals and natural creatine. Agustín Seijas, director executive of the Federación Porcina Argentina, attributed the market shift mainly to the price advantage, noting that pork’s modest price growth (about 29 % in 2025‑2026) contrasted with a 56.8 % rise in beef prices.
