Argentina's Beef Intake Plummets Amid Milei Austerity, While Chefs Push Culinary Revival

Per‑capita beef consumption in Argentina fell to 44.5 kg in April 2026, the lowest level in two decades, as soaring prices and inflation of over 200% under President Javier Milei forced households to substitute cheaper proteins such as chicken and pork. Analysts link the decline to higher beef prices (up 60% in a year), reduced wages, and austerity measures that cut public spending, subsidies and employment.

Against this backdrop, chef Dante Liporace is attempting to preserve Argentina’s meat heritage with a 14‑course tasting menu at his Palermo restaurant. The menu showcases more than 70 traditional cuts, including off‑cuts like tongue, brain and marrow, paired with fusion flavors. Limited to eight diners, the offering highlights a push by some restaurateurs to keep diverse beef cuts in the culinary conversation despite the broader consumer shift toward cheaper proteins.
