Argentina's ICAB launches trichinosis prevention campaign in Entre Ríos

The Instituto de Control de Alimentación y Bromatología (ICAB) announced expanded prevention and awareness actions against trichinosis in the Entre Ríos province of Argentina. The zoonotic disease, transmitted through consumption of raw or insufficiently cooked pork, wild boar or other game meat containing Trichinella larvae, can cause symptoms ranging from fever, diarrhea and muscle pain to severe, potentially fatal illness depending on the parasite load.

ICAB echoes recommendations from the National Service of Agricultural Health and Food Quality (Senasa), urging consumers to buy processed meats only from authorized establishments with proper labeling, to cook meat thoroughly until no pink remains, and to conduct diagnostic testing of meat before processing. Producers are advised to maintain strict hygienic conditions, control rodents, and avoid cross‑contamination. The campaign stresses that household salting, smoking, microwave cooking or domestic freezing do not eliminate the parasite, and highlights the importance of responsible consumption to protect public health.
