Argentine Adoption of Italian Fileto and Bagna Cauda Sauces Showcasing Culinary Roots

Fileto sauce, a classic Italian red sauce, is made with fresh tomatoes, onion, garlic, olive oil, fresh basil and optional seasonings such as oregano, sugar, turmeric, curry and capers. In Argentina it is prized for its quick preparation and lack of meat, distinguishing it from the longer‑cooked, meat‑based tuco. Bagna cauda originates from Piedmont in north‑west Italy and consists of a hot dip of garlic and anchovies.
