Atul Kochhar and Stuart Gillies announce Kent dining collaboration

Chefs Atul Kochhar and Stuart Gillies are collaborating for a two-part dinner series in Kent as part of the Number Eight restaurant’s Guest Chef Series. The two chefs, described as longstanding friends, will each contribute three dishes to a six-course tasting menu.

The first event will take place on Wednesday, October 21, at Essence at The Pantiles in Tunbridge Wells, where Gillies will cook alongside Kochhar. The second event is scheduled for Wednesday, November 18, at Number Eight in Sevenoaks, with Kochhar joining Gillies.

The menus will blend Kochhar’s Indian culinary traditions and contemporary techniques with Gillies’ modern European style focused on seasonality. Featured dishes include Tangra chengri maachh, gin-cured sea trout, khasta murg, and lamb shoulder shank nihari.
