Austria veal schnitzel origin gap noted in gastronomy sector

Industry data reveals a significant gap between the cultural identity of the veal schnitzel and the actual origin of the meat used in restaurants. While the dish is strongly associated with Austria, only approximately one in five veal schnitzels served in the gastronomy sector is prepared using Austrian veal.

According to the RollAMA Motivanalyse 2025, the gastronomy sector has become an increasingly vital market for the domestic meat industry. While consumer demand for beef and veal has seen a decline in retail grocery stores, demand within the catering and restaurant wholesale sector has remained more stable.

Research indicates that 29 percent of respondents eat out at least once a week, with the figure rising to 39 percent for breaded schnitzels. This high rate of out-of-home consumption means a large portion of meat is consumed in environments where customers cannot easily verify the origin of the product through packaging labels.
