Austrian bread study finds high quality in regional rolls

A quality study conducted by the Association for Consumer Information (VKI) and AMA Marketing has found high standards among regional bread rolls in Vienna and Lower Austria. Out of 25 different varieties tested, including Kaiser, Lang, Knopf, and Hand rolls, 24 received ratings of ‘good’ or ‘very good’.

Laboratory analyses of weight, salt content, microbial levels, and mycotoxins showed no issues across all samples. Sensory evaluations by experts and consumers were also largely positive, with 15 products receiving the highest rating of ‘very good’. Nine of the tested products carried the AMA quality or bio seals, ensuring domestic production and sourcing.

The only outlier in the study was a Hofer bakery-box Kaiser roll, which failed to achieve a ‘good’ or ‘very good’ rating. Both professionals and consumers criticized its consistency and aroma, noting a tough, dry texture and acidic or unusual flavor notes.
