Aydın Commodity Exchange launches international olive quality initiative

The Aydın Commodity Exchange (Aydın Ticaret Borsası) has launched an initiative to enhance the quality and value of table olives in Aydın, Turkey, by implementing international standards.

A three-day ‘Table Olive Tasting Panel Training’ was conducted with the participation of three expert instructors from Italy’s National Organization of Olive Oil Tasters (ONAOO). During the training, 20 panelists learned about the sensory characteristics and defects of table olives, the impact of processing technologies on sensory quality, and the statistical evaluation of tasting results.

Fevzi Çondur, Chairman of the Board of Aydın Ticaret Borsası, stated that the exchange aims to transfer its existing technical infrastructure and experience in olive oil sensory analysis to the table olive sector. The goal is to achieve accreditation in this field to increase the quality, reliability, and added value of the region's agricultural production.
