Bakers leave paper bags open to preserve bread crispness
Bakers intentionally leave paper bags open when selling fresh, hot baked goods to maintain product quality. According to Tim Lessau, managing director of Braaker Mühle, closing the bag traps steam inside. This moisture eventually settles back into the crust, causing the bread to lose its crispness and become soft.
To preserve the texture, it is recommended to leave the bags open to allow the goods to steam out. Small pastries typically require 15 to 20 minutes of steaming, baguettes 30 to 45 minutes, and whole loaves of bread up to 1.5 hours.
