Balkan bakeries expand across Germany amid changing food trends
Balkan bakeries are experiencing a growing trend across Germany, expanding beyond major urban centers into smaller towns. These establishments offer traditional Southeast European specialties such as burek, sirnica, zeljanica, and ćevapi.
Experts suggest this rise is driven by both the Balkan diaspora and shifting dietary habits among the German population. Gunther Hirschfelder, a culturologist at the University of Regensburg, notes that these bakeries successfully occupy a niche by combining traditional bakery goods with snack-bar-style quick meals, catering to a preference for smaller, portable portions.
Frank Sauter, director of the Baden-Württemberg bakery guild, confirmed a noticeable increase in these businesses, although an exact number is unavailable as they are not categorized separately in official statistics. The trend also reflects a changing cultural perception of the Balkan region, which is increasingly being recognized through tourism and gastronomy rather than historical stereotypes.
