Baptiste French bistro to open at The Eve Hotel in November

The Apollo Group has announced the November opening of Baptiste, a new 80-seat French bistro located at The Eve Hotel in Redfern. Occupying the former site of Bar Julius, the restaurant will operate seven days a week from 7am until late.

Owner-operator Jonathan Barthelmess and Head Chef Luke Papalia have designed a menu focused on simple, classic dishes, including rotisserie chicken, steak frites, and poached marron. The venue will feature a dedicated oyster station and a selection of desserts such as profiteroles and rum baba.

The beverage program will include wines from France and Australia, a curated by-the-glass list by Sam Christie, and cocktails by Matt Whiley. Baptiste will also host two daily happy hours to accommodate both daytime diners and late-night guests. The opening coincides with the launch of the rooftop restaurant Tenjo.
