Baristas use salt to reduce coffee bitterness
Adding a small amount of salt to coffee is a technique used by baristas to dampen bitterness and enhance natural sweetness. The sodium ions in salt activate taste receptors that suppress bitter notes without making the beverage taste salty. This method is particularly effective for dark roasts or Robusta beans, serving as an alternative to adding milk or sugar.
While the practice is used globally, it appears in various cultural contexts: in Turkey, it is part of a traditional pre-wedding ceremony; in Taiwan, sea salt coffee is a popular menu item; and in Northern Scandinavia, salting coffee has been a long-standing tradition.
Experts note that bitterness is primarily caused by chlorogenic acid lactones and phenylindanes, which develop during the roasting process, rather than caffeine. However, using salt may interfere with the flavor profile of high-quality specialty beans.
