Basque Country culinary traditions highlight regional identity
The Basque Country maintains a rich culinary identity through long-standing traditions such as the gâteau basque and the social practice of pintxos.
The gâteau basque, or etxeko biskotxa (“house cake”), has roots dating back to the 16th century as a simple domestic dessert. Its commercial history became more defined in the 19th century, particularly in Cambo-les-Bains, where pastry chefs like Marianne Hirigoyen and the Biskotx sisters helped establish its reputation.
In urban centers like Bilbao, the social tradition of “poteo” or “pintxo-pote” remains a central part of local life. This involves visiting various bars to enjoy pintxos—small, diverse culinary creations served on bread—alongside drinks. This practice serves as a social gathering point for locals and visitors alike, highlighting the region's informal and communal approach to gastronomy.
