Bavarian Weißwurst tradition explained

The Bavarian tradition of eating Weißwurst before noon is rooted in historical necessity rather than modern food safety requirements. According to nutrition expert Katharina Holthausen from the Verbraucherzentrale Bayern, the rule that the sausage ‘must not hear the twelve o'clock bells’ originated from a time before refrigeration.

Historically, butchers prepared the sausages fresh in the morning and sold them raw. Because the meat filling was highly perishable, they had to be consumed before midday. Today, sausages are produced under modern hygienic conditions and are sold already parboiled, meaning they can safely be eaten in the afternoon.

For proper storage, Weißwurst should be kept in a refrigerator at a maximum of seven degrees Celsius. Loose sausages should be consumed within two days, while packaged versions follow the printed expiration date. When preparing them, they should be placed in hot, but not boiling, water to prevent the casing from bursting.
