Bay leaves: Tips for maximizing aroma and quality

To maximize the aroma of dried bay leaves, the Federal Center for Nutrition (BZfE) recommends briefly toasting them in a dry pan. Because bay leaves release their flavor slowly, they are particularly suited for slow-cooked stews, braised dishes, and soups.

When using bay leaves, moderation is key; two to three leaves are typically sufficient for a dish serving four to six people. High-quality leaves are characterized by being stemless, intact, and possessing a green to olive-colored hue, whereas brown tones indicate lower quality. For optimal preservation, dried leaves should be stored in a dark, airtight, and dry location, where they can retain their aroma for up to two years.

Fresh bay leaves offer a slightly more bitter and eucalyptus-like flavor compared to dried versions. Due to their higher potency, fresh leaves should be added toward the end of the cooking process.
