Beef Nutrition and Safety: Rare vs Well‑Cooked Meat

Experts say the nutritional difference between rare (medium‑rare) and well‑cooked beef is minimal. Cooking concentrates protein by reducing water content, raising the protein content per 100 g from about 20‑22 g in raw meat to 26‑30 g after cooking, but no new protein is created. Minerals such as iron, zinc and selenium remain largely unchanged, while B‑vitamins may drop modestly; vitamin B12 can decrease by 10‑30 % depending on the method.

The main concern is food safety. Consuming undercooked beef carries a significantly higher risk of bacterial contamination. The World Health Organization estimates roughly 600 million cases of food‑borne illness worldwide each year, resulting in about 420 000 deaths. Health authorities in Vietnam and Indonesia advise that properly cooked beef reduces these risks without sacrificing nutritional value.
