Békéscsaba hosts 28th Sausage Festival to celebrate local heritage

The city of Békéscsaba held its 28th Sausage Festival from October 23 to 26, 2025, celebrating the local artisanal sausage tradition. Mayor Péter Szarvas emphasized that the sausage is a core part of the city's identity rather than just a food item.

The four-day event at CsabaPark attracted over 20,000 daily visitors. The festival featured various competitions, including a dry sausage contest, youth sausage-making challenges, and a large-scale sausage-kneading competition involving nearly 700 teams.

Local family workshops maintain traditional recipes consisting of 75 percent meat—such as thigh, shoulder, shank, and neck—and 25 percent fat, seasoned with paprika, garlic, and salt. The distinction of Békéscsaba sausage lies in its specific smoking and aging processes, resulting in a full-bodied, slightly sweet paprika flavor.
