Brazilian restaurants face operational bottlenecks as delivery apps drive 58% of sales

A survey conducted by Abrasel and commissioned by 99Food reveals that delivery apps account for an average of 58% of delivery sales for bars and restaurants in Brazil. While 86% of establishments offering delivery receive orders through these platforms, physical operations have struggled to keep pace with digital growth.

Research shows that 78% of restaurants use a single production line for both dine-in customers and delivery orders. This lack of separation leads to operational bottlenecks during peak hours. Approximately 33% of restaurants report being unable to meet demand due to saturation, and 35% report a loss in quality during high-traffic periods, with delivery being the most affected channel.

Planning remains a significant challenge, as 69% of establishments do not use digital systems to organize production, relying instead on manual notes or personal experience. Only 31% of surveyed businesses utilize digital solutions for operational management.
