Bread storage: Effects of freezing and improper packaging
Freezing bread can alter its starch structure, creating resistant starch that is more difficult for the body to digest. According to pharmacist and communicator Boticaria García, this process can influence how the body responds to carbohydrates. However, the caloric reduction is minimal, estimated at only 2 to 7 kilocalories per slice, meaning freezing is not a significant weight-loss solution.
Regarding fresh bread, sealing a bag while the bread is still warm can ruin the crust. The trapped steam creates a 'sauna effect,' where condensation softens the exterior, turning a crunchy crust into a gummy texture. Experts recommend using porous paper bags and leaving them unsealed until the bread reaches room temperature to allow moisture to dissipate properly.
