Broccoli culinary trends feature new recipes and nutritional benefits

Various culinary approaches to using broccoli are being highlighted, focusing on its nutritional value and versatility. In Brittany, which produces 70% of French broccoli due to its mild climate, the vegetable is noted for being rich in vitamin C and antioxidants when consumed raw.

One creative preparation is ‘brocamole’, a broccoli-based alternative to guacamole made by mixing finely chopped broccoli with red onions and sun-dried tomatoes. Another method, shared by chef Cyril Lignac, involves transforming raw broccoli florets into a soft savory bread or cake. This is achieved by finely chopping or mixing the raw florets into a batter of flour, eggs, and yeast, providing a way to repurpose seasonal vegetables.
