Dr. Nguyen Vu Binh from Hanoi Medical University advises consumers to avoid eating undercooked or raw buffalo meat to prevent the risk of microorganisms and parasites. Additionally, consumers should not rely solely on color to determine freshness, as buffalo meat naturally has a darker red hue and its color can change when exposed to oxygen or during refrigeration. Proper assessment should include checking for unusual odors, surface texture, packaging integrity, and expiration dates.
