Bursa Technical University develops lutein-enriched dairy products

Researchers at Bursa Technical University (BTÜ) are developing a project to incorporate lutein, a substance known for supporting eye health, into dairy products such as milk and yogurt. Supported by the TÜBİTAK 1002-A Rapid Support Program, the initiative aims to recover lutein from agricultural waste to create high-value products while promoting a circular economy.

Because lutein is sensitive to light, heat, and oxygen, its integration into food products is typically difficult and expensive. To address this, the research team, led by doctoral student Esma Nur Seçkin, is developing specialized carrier systems using lutein derived from agricultural waste and natural pectin produced from black cherry fruit. This method intends to lower production costs and improve the bioavailability of the component for human consumption.
