Cabbage fermentation techniques for optimal texture and flavor
Proper salt and water ratios are essential for successful cabbage fermentation, ensuring the product remains firm and crunchy throughout the winter. For whole cabbage heads in brine, a recommended ratio is 400 grams of salt per 10 liters of water, or 40 grams per liter. It is advised to use a scale rather than estimating to ensure consistent results and to facilitate the development of beneficial bacteria.
When preparing shredded cabbage (ribanac), a ratio of approximately 26 to 27 grams of salt per kilogram of cabbage is suggested. For example, 15 kilograms of cabbage requires 400 grams of salt. To ensure even fermentation, salt should be distributed in layers and the cabbage must be pressed firmly to release juices.
Key maintenance steps include keeping the cabbage completely submerged under the brine to prevent spoilage from air exposure. For brine-based fermentation, it is recommended to circulate the liquid from the bottom to the top every second day for the first ten days, then weekly after two weeks. Maintaining a temperature between 15 and 18 degrees Celsius during the initial ten days is also noted as ideal.
