Cabbage fermentation: Tips for making homemade sauerkraut

Successful homemade sauerkraut production relies on selecting high-quality, firm, and heavy cabbage heads, particularly autumn varieties which contain higher sugar levels essential for the fermentation process.

To prepare the cabbage, outer leaves should be removed, though a few healthy leaves should be reserved to act as a protective layer to keep the shredded cabbage submerged under its own juice. The cabbage should be quartered, the core removed, and then sliced into uniform thin strips to ensure even fermentation.

A salt concentration of approximately 2% relative to the weight of the shredded cabbage is recommended to draw out moisture and create the necessary environment for lactic acid bacteria. It is vital to ensure the cabbage remains completely submerged in its natural brine to prevent spoilage and mold.
