Cabbage pickling guides detail salt and temperature requirements
As the autumn harvest progresses, traditional cabbage pickling preparations are underway in Moldova and Romania. To ensure successful fermentation for winter use, such as for sarmale, several technical factors must be managed, including salt concentration, temperature, and cabbage quality.
For shredded cabbage, a salt concentration of 2–2.5% of the cabbage weight is recommended. For whole heads in barrels, a brine of 5–6% (approximately 50–60g of salt per liter of water) is suggested. Using non-iodized pickling salt is advised to avoid interfering with the brine.
Temperature plays a critical role in the fermentation process. An initial moderate temperature of 15–20 degrees Celsius favors fermentation, after which the cabbage can be moved to a cooler environment. The National Agency for Food Safety notes that fermented pickles have a high acidity (pH of 4.6 or less), which prevents the development of botulism. Experts recommend harvesting and processing cabbage within 24–48 hours of cutting to maintain freshness.
