Cantine Settesoli, a cooperative based in Menfi, Agrigento, has become the first Sicilian entity to obtain a fiscal license for the dealcoholization process. The authorization was granted by the Customs Agency of Porto Empedocle, allowing the company to produce no- and low-alcohol beverages.
The cooperative utilizes vacuum evaporation technology, a method designed to reduce alcohol content while preserving the original organoleptic profile, including the wine's aromas and scents. This move aims to meet growing market demand for low-alcohol products, particularly among younger consumers.
President Giuseppe Bursi stated that the company already possesses the necessary equipment and has received its first orders for international markets. He emphasized that innovation and research are strategic assets intended to help the sector navigate economic challenges and climate change.
