Carrots recognized for significant nutritional and health benefits
Carrots are identified as a highly affordable superfood with significant health benefits, including improvements to skin, gut, and eye health, as well as better sleep quality.
Nutritionist Dr. Kirsten Brandt from Newcastle University highlights that carrots are a vital source of vitamin A through carotenoids. This is particularly important for vegetarians to support immune function and prevent macular degeneration. Additionally, yellow carrots contain lutein, which is beneficial for eyesight.
The vegetable's carotenoid content is also linked to disease prevention. Research published in 2023 by Dr. Brandt's team suggested that consuming 300g of carrots per week could reduce the risk of certain cancers by an average of 15 per cent. Carotenoids are also associated with a lower risk of heart disease.
