Chef Adi Hădean explains restaurant pricing and hidden costs
Chef Adi Hădean has provided an explanation regarding the pricing structures in restaurants to address consumer concerns about high menu costs. He noted that comparing the raw price of ingredients to the final menu price can be misleading due to several factors.
A primary factor is weight loss during the cooking process. Hădean illustrated this by explaining that two pieces of raw meat purchased for 10 euros can shrink significantly during thermal preparation, resulting in only a single serving for the customer. Therefore, the cost must be calculated based on the final cooked weight rather than the initial raw weight.
Beyond ingredients, Hădean highlighted various 'invisible' operational costs that contribute to the final bill. These include staff salaries, commercial rent, utility bills for energy and gas, taxes, professional cleaning supplies, and general administrative and logistical expenses.
