Romania enters autumn season for vegetable preservation

As autumn approaches, residents in Romania, particularly in the Timiș region, have begun seasonal preparations for preserving vegetables. Markets are seeing increased activity with the availability of tomatoes, cucumbers, eggplants, and peppers for making traditional preserves, jams, and pickles.

Culinary experts, including Chef Adi Hădean, emphasize the importance of timing and proper fermentation techniques. For instance, cucumbers can be pickled in summer or autumn, while green tomatoes (gogonele) are best processed at the end of summer. Proper cabbage fermentation may require manual aeration to ensure uniformity.

To avoid common preservation issues such as soft textures or the appearance of a white film (surface yeast), experts recommend ensuring vegetables remain completely submerged in brine to prevent oxygen contact. Maintaining correct salt concentrations and using clean containers are also critical to preventing spoilage and maintaining flavor.
