Chef Dennis Littley identifies four foods to avoid freezing

Chef and culinary educator Dennis Littley advises that while freezing is a useful method for extending food shelf life, certain items may suffer significant changes in texture, taste, or aroma due to ice crystal formation.

According to Littley, four specific categories of food should be handled with caution:

1. Cheeses: Many varieties, particularly soft and creamy ones, can become crumbly or grainy upon thawing. It is recommended to keep cheese well-wrapped in the refrigerator instead.

2. Cooked Pasta: Freezing can cause pasta to become overly soft. Additionally, creamy sauces may separate during the thawing process. While baked pasta dishes may hold up better, leftovers with cream-based sauces are best kept in the refrigerator for short-term consumption.

3. Cured Meats: Items such as prosciutto and salami are noted as products that may not maintain quality after freezing.

4. Wine: This is also identified as a product that may be negatively affected by the freezing process.
