Chef Florence Dalia launches exclusive residency at Taj Mahal Palace, Mumbai and New Delhi

The Chambers, the members' club of Taj Hotels, announced that two‑Michelin‑star French chef Florence Dalia will headline the latest edition of The Culinary Chronicles. The residency runs from 5 to 9 August 2026 at The Taj Mahal Palace in Mumbai and the Taj Mahal hotel in New Delhi, offering members a multi‑course menu that blends classic French techniques with Asian and Australian influences.

Signature dishes include Gillardeau oyster with cucumber‑yuzu granita, Hokka‑ido scallop with burnt leek and vanilla beurre blanc, Brittany blue lobster with miso‑finger‑lime bisque, A5 wagyu with Café de Paris butter, and a peach‑almond‑verbena dessert, each paired with handcrafted beverages.
