Chef Franco Di Silvio to host tasting event at Ventinove Restaurant

Chef and owner Franco Di Silvio will host a special tasting evening at Ventinove Restaurant in Giovinazzo on November 20. The event focuses on fine dining and wine culture, featuring selections from Bocca di Lupo and Antinori wineries.

The menu aims to blend tradition with contemporary research. Featured dishes include a modern interpretation of cotoletta alla bolognese, roasted cod with chickpeas and peperone crusco, and a pasta dish titled “Dal calzone al tortello” which incorporates stewed onion, ricotta forte, and burnt onion. The menu also includes roasted duck breast with radicchio and orange.

Di Silvio brings extensive experience from various establishments, including the Michelin-starred Ristorante Marconi, Vintage Restaurant, and Ristorante il Cucciolo.
