Chef Jorg Zupan to host culinary event for Anthony Bourdain film premiere

Chef Jorg Zupan will provide culinary accompaniments for the premiere of the film ‘Tony’, a tribute to Anthony Bourdain, at the Odiseja in Ljubljana. Zupan plans to serve two sandwiches inspired by Bourdain’s style: one featuring fried mortadella and another a variation of a ‘philly cheesesteak’ using canned sardines.

During preparations, Zupan shared his critique of Slovenian culinary classics, identifying potica as one of the most overrated dishes. He noted that while many are proud of the traditional pastry, he often finds it too dry and believes it could be improved, though tradition often limits innovation. To offer a modern alternative, Zupan previously suggested a recipe using walnut pesto and a garlic herb filling with young cheese or curd.
