Chef Manu Buffara leads new menu in Portugal and speaks on sustainability in Brazil
Brazilian chef Manu Buffara, recognized as one of Latin America’s most prominent culinary figures, has expanded her professional reach through new leadership and educational initiatives.
In Portugal, Buffara has taken over as executive chef at O Elemento Atlântico, a seaside restaurant in Comporta designed by Philippe Starck. Her new menu focuses on the biodiversity of the Setúbal region, utilizing local ingredients such as rice from Quinta da Comporta, citrus fruits, figs, and almonds.
In Brazil, Buffara participated in the Tiradentes Culture and Gastronomy Festival in Minas Gerais. During the event, she led sessions on sustainability and food waste, emphasizing the importance of ingredient repurposing and the human element of cooking. She also highlighted her work with the Instituto Manu Buffara, founded in 2020, which focuses on these social and environmental values.
