Chef Michalis Marthas releases new Greek gastronomy cookbook

Chef Michalis Marthas has released a new bilingual cookbook titled ‘ViΩMA: SEA • TIME • TRANSFORMATION’. Published by Gastronomy Essentials, the hardcover edition was released in September 2026 across Greece and Cyprus.

The book explores the connection between the island of Kalymnos and modern Greek gastronomy. It is structured around three core concepts: the sea as a source of raw materials and culture, time as a tool for maturation and fermentation, and transformation as the creative process of evolving ingredients.

Spanning nearly 290 pages, the work serves as a bridge between traditional culinary memories and contemporary professional techniques, presenting Greek cuisine as a living, evolving field rather than a static collection of recipes.
