Chef Paco Morales says Michelin star didn't change his life, but pandemic taught him presence

Córdoba‑born chef Paco Morales runs the high‑end restaurant Noor in the Cañero neighbourhood. The venue has earned three Michelin stars, but Morales says the third star "didn't change my life". He credits the COVID‑19 lockdown for prompting a shift in his outlook, noting that "until the pandemic I didn't enjoy the small things".

During the pandemic he became a father to his son Leonardo and works alongside his partner and head chef Paola Gualandi. Morales says the experience has helped him focus on savoring moments, and he plans to keep improving Noor each year and expand its offering.

The chef reflects that returning to Córdoba allowed him to find his culinary identity, describing Noor as a project rooted in the local community rather than a tourist‑driven concept.
