Chef Paul Foster reveals technique for the perfect omelet

Michelin-starred chef Paul Foster, formerly of the restaurant Salt, has shared his professional technique for preparing a perfect classic omelet.

Foster emphasizes several key technical details: heating the pan to a medium temperature before adding butter, using exactly three eggs, and avoiding over-whisking to prevent a foamy texture. He advises adding salt only immediately before cooking, as premature salting breaks down egg proteins and alters the texture.

To achieve the ideal consistency, Foster suggests letting the mixture rest for 10 to 15 seconds before folding. The omelet should be folded into thirds using a spatula once it is cooked through but the top remains slightly soft and liquid.
